TL;DR You can farm and trap just fine during winter. Fishing is so-so if you're good at it or pointless if not. You can farm just fine even when it's freezing throughout the day. Doesn't make sense but neither does the accelerated spoilage of player-canned/frozen goods (if on default settings) so that's a wash.
Actually, cabbages last 150 days in the freezer and winter is 90 days. So cabbages will last winter! According to the wiki, freezers extend life by 25x and fridges by 5x.
