There is one Lothric knight near the entrance. Kill him and rest at bonefire and repeat ofc until you get enough medals. You can also get them as a reward for killing bosses as sunlight warrior in co-op. Maybe you can farm some by invading people in the pvp area (after Sullyvahn) but idk if you still can with the servers being closed.
